I didn't tape record it but it went something like this:
Kitchen Slave: Do you have these greens with the whole plant?
Windfall Farms Farmer: We don't harvest that way because it destroys the plant so we pick this part.
Kitchen Slave: I am from Bouley, I assume for us you'll do it the way we want it.
So much for sustainability when fancy plating is at stake.

ReplyDeleteUm, this isn't quite how I remember the conversation and "kitchen slave" is an awfully demeaning moniker.
ReplyDeleteAs I recall, said slave wanted whole borage plants and we generally only harvest the edible flowers. It should be noted that there is nothing unsustainable about harvesting the whole plant. However, for our purpose it is just not economically sustainable.
